I think you should leave your old art up as a testament to the evolution of your art, so to that end I voted Cut the Deck. However, I think you should do whatever most drives your passion as a creator.
Remastering Bread Knight's story would just be getting posted as one new lump of episodes, it wouldn't be setting out to replace the old ones
As an RPGMMZ developer myself, I really want to see the RPG Maker project!
I would back the FUCK out of a SWORDS RPG
The RPG is really tempting, and if it comes to fruition I'd strongly recommend Godot instead of Unity.
That's really a "what people and money do I have access to" sort of problem for much further down the line, I think
