My total layman thought is that "dark matter" is the baseline matter of the universe. It has the components necessary to interact with gravity. Baryonic matter has additional components that allow it to interact electromagnetically and interact with photons; there is something "extra" that baryonic matter has, and that electromagnetic, strong and weak nuclear forces interact with, which "dark matter" lacks. Something down at the quark/gluon level. So what's the difference? What's present in baryonic matter, and the forces that baryonic matter interacts with (strong.weak, E/M), that isn't in "dark matter"? That's what my layman mind visualizes. Matter is a browser with plug-ins and extensions. Dark matter is Netscape 1.0 :)
