FWIW the best restaurants in Baker City and John Day, Oregon—both in deeply red districts—have gender neutral bathrooms. We had gender neutral bathrooms at UCSC in 1988 AND IT WAS FINE!

There are two notes of hope here I've noticed as an enby, the bigotry is by a press that is currently dying and being read by less and less people, its newspaper circulation isn't even being reported any more and still needs that revenue to survive and secondly that this movement is essentially a cult, cults are essentially social bubbles much like the economic ones, they will eventually collapse from their own contractions and other bollocks.
