Eating better when you're beating to weather - Episode 47
Hi Gang!
We have a quick window of opportunity to upload our latest video for you before we head out to the reef and do some more Free Range exploring. Right now we're at Magnetic Island but soon we will be sailing into Townsville. So if any of you are based near there and would like to catch up with us, let us know.
In this video we say goodbye to Margaret Bay and continue sailing south down the Queensland coast against the trade winds. Troy discusses the best way to bleed tuna and why it works and Pascale shows you a great recipe for cooking it too! We also talk our way through avoiding a collision in the shipping lanes.
Featuring:
1:28 How to Bleed a Tuna and Why it Works
6:47 Pascale's Giant Scone
12:00 Ingenious Barnacle Removal
13:38 How to make Thai Tuna Burgers
23:43 Rules of the Road
Enjoy!
Cheers Troy and Pascale

Great idea using the Cast iron lid as a skillet. I use oats whenever I make meatloaf at home. never thought using it in fish burgers! Ya cant let good tuna go to waste!
That's right, we've found tuna mince us the best way to use up all our off cuts. Delicious
Great video guys, we really get a sense of what it's like making headway into the weather in this one! If you're interested, Les Hiddins made an episode of Bush Tucker Man about Restoration Island which was interesting, he described it as a supermarket!
We love Less Hiddins although we're not convinced there's much on offer at restoration island on the way of bush tucker, we'll have to try and find it on YouTube to see what he's on about, it's piqued our curiosity!
Fantastic video! Learned so much, and now I'm good and hungry as well! Loved the tuna lesson, and can't wait to try doing some tuna burgers! I finally got my little boat sailing yesterday for a shake down sail. First sailing I've done in over 30 years! Felt amazing! But, it was on a lake. Wind changes direction constantly... going to take some getting used to. Had to avoid some traffic, but nothing as dramatic as that container ship! We have barge traffic to contend with, which is similar in terms of right of way issues... Thanks so much for the inspiration, and the education!
You're welcome Scott. Lake sailing songs like excellent practice. We plan to try and get Mirrool into a lake further south too, I should be able to get my tacks up to scratch. Pascale
Thanks Troy and Pascale. I so enjoy your informative vlogs! This one was exceptional with the anatomy of a tuna. I have caught and flayed a few, but never with the expertise you have showed as to what to do. The fish tasted great on the open seas, but I am sure could have been better. - Capt. Rick
Bleeding your tuna is key to a premium sashimi grade product! We're sure the next one you catch will be even more delicious
Thanks Troy for the informative tuna anatomy lesson.
Tough bit of sailing...but I'm pretty sure it beats sitting in an office all day. Hadn't noticed the disco ball before, nice touch. Thank you both for another great video.
A gift from our mate Raph :) it didn't last the trip down sadly
More wonderful lessons from Troy and Pascale!
We are grateful to get this opportunity to share our experiences and the lessons they bring with all of you.
Ahhh the woman who sings when cooking is a woman in love. ;-) Pascal singing reminded me of my girl. Make the most of every moment as what you have is so very special. It's something so very few people have in life.
What about a fella who sings while doing oil changes? Head over heels too Nige?
Another great video Troy an Pasqual. Hard work slogging to windward for several days at a time. I admire your "Can do" approach to things. I sailed from Bunbury to Perth in strong Northerlies a few years ago, challenging!
As did Troy a couple of years ago on his way down to Perth! That WA coast can be very unforgiving in either direction you travel.
Hard sailing.....well done. During my own recent trip around the east and south Uk coast...all to windward....i could only eat at the beginning and end of the day except for a quick snack. One of my favourite foods to grab is rich fruit cake which goes down well. I couldn't help but notice that your tacks are very wide, now i know how difficult it is to get a small boat upwind in a breeze but maybe having a small and flat jib that is either independent of the furling genny or has soft hanks around it might help in those conditions.
I would like very much a solent stay with hanked on jib for heavy weather to get my centre of effort in. The main reason for the broad tacks is a wave height/ current combo. In flatter water we steered where pointed but lost plenty of ground in those 1-2m seas.
Another great Video Guys, I think your motto should be 'Think, adapt and change' both for the Sailing aspect and Pasquale's recipes I genuinely learn something new with every one of your posts, and as for being bedraggled at the end, You may have been Troy, but a certain young Lady looked as calm and collected as ever!
Haha cheers Andy. I reckon I looked petty bedraggled, but will take the compliment!
Big Scones.. (Thats the biggest Scon I ever saw - never knew you could steam them) Thai Tuna Burgers - that looked really nice - liked the oats trick. All whilst beating hard into the wind and swell, avoiding Capt'n Bligh ghost ships. (turn to Starboard !) Palsq rolling around in the galley - Fruit and nuts everywhere. All normal. Pasq vis a vis your great cooking ID. Correct me if I'm wrong - French background and cooking cuisine skills ? - any ancestors that did the same ? All great as usual - got there safely. XX Pete
Cheers Pete! Yup French grandmother who was an exceptional cook as was my mum ;-)
Nice video, Thank You both. I just told my wife I've seen great tuna catching videos, great tuna bleeding videos, great tune filleting videos, and thanks to Pasquelle, great tuna cooking videos. Now I just need to catch a tuna!
You will be well equipped to deal with that beauty now when it comes over the side!
Never watch Free Range Sailing while hungry! Although it seems that you have the same problem... "too yummy, must stop. Maybe just one more mouthful" Nice headsock Troy :) I'm also reminded of the Delphi programming language that has all its sample applications use a "fish facts" database. I'm sure having Troy as the demonstration for a new sailboat would work just as well.
With programming I'm afraid we're in unknown territory now Moz but I reckon fish are a great sample to use in demos.
