Chainsaw Man is my choice! Its the new big anime out right now! Love how gritty and mature it is. If you going the wholesome route for this replacement, Spy X Family then!
I can't stop recommending Monster, (finished, 74 ep). although the HXH manga is not finished, the anime has an ending with a closure (148 ep 😅) and also March comes in like a lion (in japanese sangatsu no lion) (44 ep) this last one is very soft ✨
Monster is so good yet it’s hard to find on many streaming platforms. I’d say maybe your lie in April or march comes in like a lion.

If you wanted something more lighthearted/touching Spy Family (1 season 24ep.) or Kaguya-Sama (3 seasons 36 ep.) are both great shows with extremely endearing characters. If you want something more serious and complex with an extremely compelling plot and cast of characters, Re-Zero (2 seasons around 40 ep.) is a fantastic anime, but it can get QUITE heavy at times.
I recommend “your lie in April” next. It’s the perfect show for you two :)
