(you are supposed to cook it slow on low to medium heat. not high heat) all of the white is supposed to be cooked and not runny. and the yellow at that point is broiled. (heated up but not to a point where it solidifies. ) as in you should clearly notice a diffrence between an uncooked egg yellow. and a sunny side up egg yellow. OK the Salmonella thing explained: The egg white and egg yolk are sanitary, salmonella doesn't live in the egg, but it lives on the shell. When you break the shell, or if the egg was warm, salmonella can make it inside and on the egg white. But once the egg white is cooked, the egg is safe because there was no bacteria in the yolk, ever. The reason you can get salmonella from cookie dough with egg is because bacteria love sugar and you whip the egg, butter and sugar all together which basically supercharges the bacterial growth. So eating a raw egg is in many ways safer than eating cookie dough, and eating a fried egg with cooked yolk is even safer, eating a soft boiled egg is even safer because you killed the bacteria on the shell with the boiling water. Modern chickens are fed antibiotics a lot and they are monitored, so if a chicken is sick they are spotted right away, There is basically 0 chance of salmonella in modern eggs, organic have higher chance, but the most common sources of food poisoning are fresh vegetables, today. High volume of water in rinsing is the best way to fight food poisoning. High volume of water not a jet spray, is what removes contamination best.
