No Spoilers btw: Its highly recommended that you read the Tokyo Ghoul manga instead. The anime is an extremely rushed and bad adaptation of a great manga. They cut out so much story, dialogue and character development in the anime that it feels like a crime. They might as well be two completely different franchises that are the same in name only. The anime DOES have great music though, so ill give it that. So if you do decided to watch the anime, just know that if you read the manga you'll most likely end up hating the anime retroactively (at least that's what happened to me).

Mob Psycho 100 is another personal favourite that’s shorter and finished. It’s 3 seasons with 12-14 episodes each and although not as gruesome gives me the same attachment to characters as AOT

Tryna explain without spoilers. if you want a more lighthearted and not so serious and depression themed anime, I'd say The Apothecary Diaries is a good choice. Both Chainsaw Man and Vinland Saga deal with heavier topics. I don't have an opinion on Tokyo Ghoul and FMAB since I have not watched them. And I honestly don't remember much from Oshi no Ko.

If you want something light on action but wholesome and emotional, would certainly consider adding Violet Evergarden onto that list ^^
