I don't think it will be a matter of straight up fighting as I imagine Rin will just try to defend herself as best as she can until she can calm down Eliza enough to do whatever it is she needs to do.

I'm not sure? Eliza MIGHT be a vampire now and "might" have the advantage in speed/strength, but we haven't seen what Rin can do besides her one "fight" with Viperia. Rin IS a former SOS trainee/current Shado-Jin member and has years of training with MC. She'll definitely have more combat experience between the two. But Rin also got bested in grappling by Viperia, and well… Eliza is on top of her right now ⬆😬. But Rin still has her wind abilities (damn you, Buu, for making me think this hard about this 1v1 😂). You know what! Eliza is on top of Rin in the render, so there 💥... *panting 😩* Also, girls. No fighting. Kiss, hug, and make out—I mean, make up 😅.
