It's explained in his novel so no anime/manga spoilers, but he got stuck on a deserted island with a guy who would become his first mate, Masked Deuce. They found the mera mera no mi in a chest and split it in half, Ace took a bite first and got the power while Deuce just got a nasty tasting fruit.

Until Haki was introduced, no character was shown clearly with Haki. That includes Ace. That's why you don't really see it..

This arc is one of the longest in the series, but there’s also a ton of lore drop throughout it as well. That being said, pacing could still have been better, but still great!

God Usopp!! Also they called him Captain Usopp because that's how he introduced himself when he came back. I also love that Sabo still uses "Fire fist" name/move since that was Ace's signature move. And for Ace Haki, I believe he had conquerors haki but the reason Akainu was able to kll him was because his haki was stronger + his devil fruit (magma is hotter than fire).

Ace did know haki, he knew all 3 types actually. In the instance with akainu, whether ace used haki or not it wouldnt have mattered bc 1. akainu can use haki too and his is stronger and 2. akainu’s fruit (magma-magma) is elementally a counter to aces fruit(flare-flare) solely bc magma is alot hotter than fire

This isn't really explained well but Ace has haki its just that pre time skip we weren't exposed to haki so it wasnt shown. Ace also says he has it too after Luffy used conquerors haki so it implies Ace had it too.

It is explained quite clearly, I believe later on, that observation haki is something that you have to actively use. Which I believe is Oda's way of being able to write the story more freely. Because if that was not the case then it would be very jarring with all the plot holes that would happen where someone was not noticing something with their observation haki in certain situations

I think you can have multiple captains but like a sub captain role. I think white bread had that if I’m not mistaken. White bread was the main captain but then he had other groups under him that had captains. I have a theory that some if not all of the straw hats are going to control their own groups of people under luffy. I can see ussop being one of them.

In regards to Devil Fruit if two people eat the same fruit. The person who takes the first bite gets the power and like you said earlier only one bite is needed.
