This is a throwback reaction!
As for the question of the movie.... did Hans know it was Shoshana? Many believe he did, because of the glass of milk and his overall ability to identify a Jew - but there was also speculation because of the cream on the strudel. Some people assume that the strudel was made with lard, and not butter. Seeing that she ate it relaxed him to think she was not Jewish. Adding the cream to the lard made strudel makes it not kosher as you can's mix fats and meats under the Judaic faith. Thats why some feel this scene was so tense, and why she didn't want to eat the cream until he told her to. Another factor is Hans is his personality - one of his main trait's being able to make people think he knows everyone’s dark secrets. Thus, at the end of the convo, when he said “I had something else to ask you…” it was somewhat of a test, trying to get a reaction. His behavior resembles good poker players watching other players’ reaction to their cards. SORRY FOR THE RANT --- THIS MOVIE IS A GEM
So funny watching these old reactions, makes you realize how long its been!
