Nerdy answer to the nerdy question about Orcs. There was a dark lord before Sauron, called Morgoth. you heard Legolas call the Balrog a "Balrog of Morgoth", because the Balrogs served him. Sauron was also a servant of Morgoth, his lieutenant. Morgoth made the first Orcs. Tolkien did change his mind a few times about where Orcs came from, but the most popular one, and the one the film is referencing, is that he took Elves and tortured and corrupted them, used his dark arts and such to make them twisted evil creatures. He used Elves because at that time they were the only race in Middle Earth! Dwarves and Men hadn't awoken yet. He may have also used animals, but that is debated. Dwarves have a particular resistance to the sway of evil. When men awoke he may have also used them, and bred them with the elvish orcs. That's where the race came from, but then they "reproduce in the manner of the Children of Illuvitar (Elves, Dwarves, Men)" i.e. sexually. So baby Orcs are born from mommy and daddy Orcs, but the very first ones were Elves.
