Question: If we choose the option to give him a gift we made with one of our skills, does that mean we can choose a somewhat customized gift, like say, a drawing/painting of the MC and Cove, or a scrap book of us with all of our moments with him from childhood?
Yep! You will be able to make him various things based on what the MC likes doing.
Might choose the poppy in my walkthrough where my character is less of a tease since I love how it's kinda connected to two moments in the game so far x3 (when they are kids and kinda in the soiree)

Cove just couldn't handle so many wonderful gifts all at once, haha. But in all seriousness, the more gifts that are given, the harder it'd be for him to respond in a tailored way since it'd be kind of weird for him to stop and explain the importance of each gift all in a row. So it's just one present in order to make sure he can properly react to the specific gift chosen ^^.
