The Jedi aren't "slaves" of the Senate. That's a very loose definition of the word. I mean they are serving the Republic willingly lol. And they aren't blindly loyal to it either. In ep III they try to arrest Palpatine, meaning they primarily serve the Republic and its ideals, not the politicians who they distrust. You could say that's a "slavery" too, but again, very loose definition. If being a slave means doing things willingly, then everyone is a slave, and the word loses meaning. And I wouldn't put much weight on the word of an actual slaver. The Queen was obviously just trying to blame others.
If anything they're slaves to their ideals and self appointed role as defenders of the Republic. If it were not for Dooku's presence as leader of the Confederacy the Jedi would have no reasons to be involved in the war at all.
