I took in some of your suggestions, adding in a way to make the Knight himself more buff, and added a few bells and whistles such as a high score timer and NPCs that panic on the roof you stand on, toggle-able via the options menu.

Read the README file in the zip for details on how to play the game and it's various modes. A briefing:
Run to the far left and right sides of the roof to the cannonball piles to grab them, you then lug them over to the cannon in the middle. It auto-loads on Easy and Normal, but on Hard you manually load it by mashing x/ctrl.
Then, time your shot to hit the knight when he's in the middle of walking/in motion. If he's standing still or close to it, he'll swat your cannonball away like a pesky insect.
