Making bacon in our home built smoker - Episode 24

Good afternoon patrons

Determined to make the best bacon and Christmas ham of all time, this week Troy builds a marvellous smoking contraption almost entirely out of recycled materials.

He had a vision, delivered on it and how professional looking was the result!?

During peak bacon consumption, opening the door to the house after chores outside was a smell to behold.

We hope this one doesn't leave your computer desk or couch drenched in a big puddle of drool...

Until next week, our sincere gratitude for your ongoing support of our work.

Nice peace of work that smoker. It’s so true, home crafted (sounds better than homemade) bacon is so much better than commercial, but it’s very hard to resist. Looking forward to seeing what you guys do to the ham skin (always my favourite as a kid). I was so lucky to grow up on a traditional small farm.

I think home crafted will be our new term for bacon. It definitely fits very nicely. We feel lucky to be able to give the children in our lives the experience of what we are doing now first hand. One little visitor even cried when it was time to leave which was very sweet and no small validation!

Gives new meaning to "bring home the bacon"! Looks awesome!

How about giving a home to the bacon!

Great vid. The produce looked good before the smoker, superb after. Great work on the crafting by Troy. Must try some smoking, my only experience to date is grilling.

Smoking is incredibly versatile and can be done successfully in very simple apparatus. We only built such a smoker for the fun of it and our requirement to smoke a ham leg horizontally. The easiest smoking I can think of is throwing a handful of lemon leaves on the coals in a kettle BBQ when cooking some thick fish fillets. Delicious!

I have not attempted a brisket yet, due to the time involved. And salute anyone has done back to back. What wood did you use for the brisket? Promise I will not ask time or temperature 🙂

Getting the right temperature took all the time! We used Jarrah (Eucalyptus marginata), a very common tree in our area, though overlooked by many Aussies. I think the fact that it is a 'gum' tree puts it off people's radar as a smoking wood but thete is no oil in the heart wood.

Cheers Rob - honestly I was so elated with what he achieved. Here's to many more outdoor smoking adventures.

I used store bought offset smokers for years before splurging on a Traeger . There is something lost in the automation, the wood selection, the attendance to smoke quality, and the satisfying feeling of accomplishment. And seriously, a homemade offset smoker for $9... also a great feeling of accomplishment. Lastly, Australian bacon is the best! Especially the home grown variety!

Now you know why we only smoked the ham for 2 hours! After tending to a fire for 12 hours to smoke some beef brisket it made it hard to get other chores done. We did feel an immense sense of accomplishment once it was done though. Next time we attempt a 12 hour session we will be put aside the day and enjoy a few pots of herbal tea ;-)

I think where you blocked off the holes in the cooker section you should have added a dial thermometer. I liked the way you used a level to draw the door outline, and am assuming that since you are on the other side of the world you have to have the level upside down for it to work properly ;-) [Ontario Canada]

Haven't watched the episode yet, but if this DOESN'T leave me in a puddle of drool, I'm going to be disappointed. Edit: Not disappointed ;)

Loved it, the smoker has such a rustic look, have to name it lol. 😀 Making & smoking your own 🥓 🥓 is the only way to go. Only downside is it goes so quick 😋 Another awesome episode in paradise. 👏
