"Smells like burnt shit" is a nod to the second game. If you'll recall, in Day 1 of Seattle, Ellie and Dina have a convo about coffee and the burnt shit line was something Dina said. There's quite a few nods to the second game in the show. I think when they first wrote/filmed it, they weren't sure how the show would do so just in case they didn't get greenlit for future seasons they threw in some nods to the second game for the fans. They're subtle nods, but they are there.
