As someone who "self taught" wood carving. Yes especially early on you will cut the crap out if yourself. I embedded a 2inch chisel into my palm and had to super glue it shut. But also yes alot of the carved stuff you'll see online is done with machines.
This trick is maximizing your points of contact (between hands and tool) and making sure your blade is shaving sharp. Then it helps to know how to read the grain so you're working with the wood instead of brute forcing it. Maximum control with minimum friction.
