I was on the phone with my friend earlier, and I don't know exactly why this came up, but I made an analogy about how cheese is just milk that went through trauma and came out stronger. it's the rising phoenix of dairy. Like milk tries to go bad and cheese says, "No, I'm going to become a flavour bomb and cost more now." Which, if you think about it, is actually truly inspiring. I can only hope to age that gracefully...
